Rotor Spacing and Tolerances
Having a second pair of wheels is a great idea, it allows you to always have the most suitable wheels fitted for your ride.
All major hub brands design their hubs to the same dimensions and on paper, you should be able to buy two different wheel designs and the rotors and cassette should line up. In practice, the manufacturing tolerances for the hubs, rotors and cassette can make a big difference to the alignment and you may need to adjust the brake callipers and adjust your derailleur limits each time you swap between wheels.
